Whatever you call it, this choose-your-own-ingredients feature on the flat top grill is the latest thing going at the local Chinese buffets. Even our local strip mall hole in the wall has started doing it, with highly satisfactory results. This man fries a first class egg, and everybody knows an excellent fried egg is the centerpiece of a good strip mall Chinese buffet Mongolian or Korean barbecue.
(This is my first remotely successful attempt at documentary photography with the Polaroid Cube toy camera– it’s not as good as the grilled noodles with chicken and onions and carrots and garlic and soy and fried eggs, but it’s still kind of fun.)
